Guilty Pleasures

I am not a fan of reality television. My wife, on the other hand, has yet to meet a reality show she doesn’t like. Okay, that’s not entirely true, but right now, our TIVO is full with past episodes of ‘So You Think You Can Dance.’ Now, I do have one guilty pleasure in reality television that just ended its second season – Hell’s Kitchen. I’m sorry, but these people sign up to have a world-renowned chef yell at them and call them all sorts of clever, degrading names. It is hilarious.

So, what’s the point of this? Well, it seems that a dish that was continually messed up and drawing the ire of the chef was risotto. It was either like glue, or too thin, or just plain bland. Well, I went looking for some information on how to prepare risotto (and to find out just exactly what it is), and I came across this: http://whatscookingamerica.net/Pasta_Rice_Main/RisottoMakeAhead.htm.

A pretty interesting read, if you think you would enjoy risotto.

have fun!

I love me some catfish…

As a kid, one of my favorite things to do was to go with my dad and my grandfather down to the lake and do a little fishing.  We would bring home our catfish catch of the day, and my mother and grandmother would fry them up and serve them with cole slaw, corn-on-the-cob and hush puppies (or fritters).  It made for a very fun day, and we usually did this about 5-6 times every year, mostly in the summer.  Most people think of catfish as a detestable, bottom-feeder in the fish-hierarchy, but this link will hopefully sway (popular) opinion on this tasty fish: http://whatscookingamerica.net/Seafood/FriedCatfish.htm
